Spicy Oven Fried Catfish

Ingredients:
4 dressed, farm-raised catfish
¼ Cup dry bread Crumbs
½ tsp. paprika
1/8 tsp. cayenne pepper
½ Cup skim milk
¼ Cup yellow cornmeal
½ tsp. salt
1/2 tsp. garlic powder
1/8 tsp. thyme
¼ Cup butter, melted

Directions:
Place oven rack in middle oven position and heat oven to 450 degrees. Combine cornmeal, bread crumbs, salt, paprika, garlic powder, cayenne pepper and thyme. Dip fish into milk; coat with cornmeal mixture then place in a greased 13x9 inch baking pan. Pour butter over fish and bake uncovered until fish flakes very easily with fork. Cooking time about 15-20 minutes.

Tip:

Lemon Juice rubbed on fish first before cooking will enhance the flavor and help maintain a good color.
